It's been a long time since I last cut out an image, I used to use the rubber tool, however there must be an easier way. Does anyone know how to do it properly? I need a very smooth finish.

if you're going to use a lasso tool, you might as well use the magnetic lasso tool zoomed in all of the way.

That's just what I do and it works plenty fine if you zoom in enough. Magnetic lasso was always going places I didn't want it to go.
